Another Fan Favorite!

Today's "anti-inflammatory" recipe . . . "Honey Chicken Kabobs with Shirataki noodles"
And here we go . . .
Ingredients: 1 serving
4 ounces of range-free chicken breast sliced thin
2 cherry tomatoes
1/2 a medium red onion, cut in half again
1/2 cup of mixed broccoli and cauliflower
6 small mushrooms
2 cloves of garlic
8 - 1/4 inch slices of fresh organic zucchini
1 tablespoons extra virgin olive oil
1/8 teaspoon ground black pepper
Dash of Pink Himalayan salt
1 cup of Magic or Shirataki noodles
2 skewers
Chicken sauce: 1 serving
1 tablespoon extra virgin olive oil
2 tablespoons Manuka honey
1 teaspoon Yacon syrup
Garnish:
3 slices of lemon and chives
Instructions:
Preheat oven to 475
Place tinfoil on a baking sheet
On 2 skewers in a pattern form . . . place zucchini, mushrooms, garlic, chicken, onions broccoli, cauliflower and tomatoes
Then place them on the baking sheet
Brush with 1 tablespoon of olive oil
Sprinkle a little salt and pepper on them
Bake for about 10 minutes
While that's baking . . .
In a small saucepan, mix and warm all sauce ingredients
Then brush them onto the chicken and veggie skewers
Bake another few minutes until chicken is golden on the edges
While that baking . . .
Remove Magic noodles from the package and place them and the package liquid in a small saucepan and warm for about 5 minutes
Then drain the noodles and place on a serving dish
Remove Chicken skewers from the oven and place on the serving dish
Any left over chicken sauce pour over the noodles, garnish and serve
And this yummy "anti-inflammatory" meal was only 602 calories
