Avocado, Raspberry Mousse for Valentine's Day

So if you'd like a "compliant" romantic treat for your Valentine's Day celebration tomorrow . . .

Try my yummy "Avocado, Raspberry Mousse with coconut whipping cream"

And here we go . . .

Ingredients: 1 serving


1 ripe avocado, peeled, pitted and mashed

1 tablespoon raw cacao powder (92%)

2 teaspoons organic Yacon syrup

1 pinch of Pink Himalayan salt (optional) (a pinch is about 105 milligrams of sodium)

Whipping cream:

13.5 oz. full-fat coconut milk chilled overnight in the refrigerator

1 tablespoon of Manuka honey

1 teaspoon of "pure" vanilla extract

1/4 cup of frozen raspberries and its juice

Garnish with whipping cream and frozen raspberries


In a blender, blend all mousse ingredients together until a smooth mousse texture

With an electric beater in a mixing bowl . . . whip together all whipping ingredients

Now . . . separate 2 tablespoons of whipping cream from the bowl and set aside . . . the rest in the mixture in the bowl . . . pour the raspberry juice and mix well.

Then layer in a serving glass the mousse and raspberry whipping cream. Depending on you size serving glass . . . you may not use all of the raspberry whipping cream.

I topped with the 2 tablespoons of plain whipping cream and raspberries.

And what are the benefits of this yummy little treat???

Well . . . "avocados" - can protect your eyes, lower blood pressure and lower cholesterol, fight cancer, prevent congenital disabilities, treat arthritis, protect the heart, prevent and control diabetes, prevent constipation, increase nutrient absorption and encourages weight loss.

"Raw cacao powder" (not cocoa powder) - is packed with "flavonoids" which can lower blood pressure, improve blood flow to the brain and heart and aid in preventing blood clots. These flavonoids can also reduce the risk of diabetes.

"Yacon syrup" - can lower blood pressure, boost liver health, keep "bad" cholesterol in control, prevent diabetes and regulate blood sugar and improve bone health.

And "Pink Himalayan salt" - can improve respiratory diseases, balance body pH, reduce signs of aging, improve sleep quality, regulate blood sugar and whoohoo . . . increase "libido".

Coconut milk" - is a medium chain essential fatty acid, lactose free. has anti-inflammatory, anti-microbial and anti-fungal properties, supports cardiovascular health and reduces stomach ulcers.

"Manuka honey" - has antibacterial, antiviral and anti-inflammatory properties that can help treat cuts and scrapes, infections, ease stomach aches, improve digestion, boost the immune system and provide more energy.

"Pure vanilla extract" - as a sugar substitute can reduce high blood glucose levels and its antioxidants can provide healing effects.

"Raspberries" - provide plenty of potassium, which is essential for heart health. They lower blood pressure and the omega 3 fatty acids in them can help prevent stroke and heart disease. Plus . . . they contain manganese which is necessary for healthy bones and skin. This also helps to regulate blood sugar.

And this yummy little treat contains about 442 calories
