Avocado, Raspberry Mousse for Valentine's Day


So if you'd like a "compliant" romantic treat for your Valentine's Day celebration tomorrow . . .


Try my yummy "Avocado, Raspberry Mousse with coconut whipping cream"


And here we go . . .


Ingredients: 1 serving

Mousse:

1 ripe avocado, peeled, pitted and mashed

1 tablespoon raw cacao powder (92%)

2 teaspoons organic Yacon syrup

1 pinch of Pink Himalayan salt (optional) (a pinch is about 105 milligrams of sodium)


Whipping cream:

13.5 oz. full-fat coconut milk chilled overnight in the refrigerator

1 tablespoon of Manuka honey

1 teaspoon of "pure" vanilla extract

1/4 cup of frozen raspberries and its juice


Garnish with whipping cream and frozen raspberries


Instructions:

In a blender, blend all mousse ingredients together until a smooth mousse texture


With an electric beater in a mixing bowl . . . whip together all whipping ingredients
