"Broccoli Soup"


So since we spoke of "broccoli" being a "superfood" for "diabetes" yesterday . . .


I thought today . . . I'd give you my recipe for "Chicken, Broccoli Soup"


And here we go . . .


Ingredients: 4 servings

Soup:

2 cups of organic fresh Broccoli - chopped up

3 tablespoons of organic extra virgin olive oil

1 large red onion - chopped up

1 large organic carrot - chopped up

4 cups of organic "low-sodium" chicken bone broth

3 tablespoons of organic almond flour

1/2 cup of cream of coconut

Pinch of Pink Himalayan salt and black pepper (salt optional - and a pinch is about 105 milligrams of sodium)


Chicken:

1 tablespoon of organic extra virgin olive oil

16 ounces of free-range chicken breast - cubed

1/8 teaspoon of organic ground garlic

1/8 teaspoon of organic ground onion


Garnish:

A pinch of dried chives

A pinch of paprika


Instructions:

In a saucepan . . . add oil, onions, carrot, salt and pepper.

Heat over medium heat until onions are translucent.


Then add broth and bring to a boil

Reduce heat back to medium, add flour and stir mixture together.

Cook about 1 more minute


Then add broccoli . . . reduce heat again to a simmer uncovered until broccoli and carrots are tender . . . about 15 minutes


Then add cream, mix well and simmer an additional 5 minutes.


While soup is cooking . . . I cooked in a skillet . . . olive oil, chicken, garlic and onion

When fully cooked but tender . . . set aside


Now . . . If you want your soup chucky . . . serve now with chicken on top


If you like your soup smooth and creamy like what I did . . . remove and put soup in a blender to mix the soup ingredients together. NOT the chicken


Place chicken on top and garnish with dried chives and paprika



So what are the benefits of my "Broccoli Soup"???


Well . . . "olive oil" is rich in healthy monounsaturated fats, high in antioxidants, has strong anti-inflammatory properties, can aid in the prevention of strokes and protects against heart disease


"Broccoli" is a nutrient-rich vegetable that can reduce inflammation, improve blood sugar control, boost immunity and promote heart health


"Red onions" are full of sulfur compounds that protect the body from ulcers and various cancers. They can help control diabetes, cure sore throats, help with constipation, reduce high cholesterol, ease arthritis and are good for heart health


"Carrots" are high in fiber that can help keep blood sugar levels under control. They're loaded with vitamin A and beta-carotene which can lower the risk of diabetes. And due to being high in calcium and vitamin K . . . they can strengthen bones.


"Almond flour" is rich in vitamin E and other antioxidants which help reduce the risk of cancer, stoke and diabetes.


"Chicken bone broth" has anti-aging properties due to collagen. It's also good for digestion and gut health, supporting immune functions, joint health and promoting sleep


"Cream of coconut" DOES NOT contain "cholesterol" and is a great source of fiber. It also is a good source of "potassium"


"Pink Himalayan salt" improves respiratory diseases, balances the body's pH, reduces signs of aging, improves sleep, regulates blood sugar and increases "libido"


"Black pepper" and its active compound called "piperine" contain potent antioxidant and anti-inflammatory properties that can improve cholesterol levels, blood sugar control and brain and gut health.


"Dried chives" can help to prevent cancer, osteoporosis and it can improve memory


"Paprika" contains "capsaicin" which has antioxidant properties that can help reduce the risk of cancer and heart disease, improve immunity and relief gas.


So you can clearly see this is a very healthy option for correcting any ailment . . . especially "diabetes"


And this yummy little soup was about 337 calories per serving and adding 4 ounces of chicken it was 460 calories per serving.
