More "Healthy Yumminess"

Since yesterday was "National Almond Day" . . . I thought today I'd give you my yummy "Chocolate Almond Cake" recipe
And here we go . . .
Ingredients: 4 servings
1 cup organic Almond flour
2 tablespoons of organic unsweetened Almond butter
4 tablespoons of organic unsweetened Applesauce
2 tablespoons of Manuka honey (no substitutes)
1/2 cup of organic sweet cacao nibs (optional)
2 eggs
1/2 teaspoon of "Ceylon cinnamon" (no substitutes)
1 pinch of Pink Himalayan salt (a pinch is about 105 milligrams of sodium) (optional)
Dusting of Vanilla powder for a garnish
Instructions:
Preheat oven to 350 degrees
Lightly grease ramekins with olive oil
In a mixing bowl, add eggs, honey, nibs (optional), almond butter and applesauce. Mix well.
Then add to that . . . flour, cinnamon and salt (optional) Mix well.
If your batter is too thick for your liking . . . you can add a little more applesauce. Just a touch mind you or it will be too runny.
Then pour in small ramekins and bake for 30 to 35 minutes or until a tooth pick stuck in the center of the ramekin comes out clean.
Cool . . . then garnish with a dusting of vanilla powder
Okay . . . so what are the benefits of this tasty little "Almond" treat???
Well . . . "almond flour" - is rich in vitamin E and other antioxidants which help reduce the risk of serious health conditions like cancer, diabetes, stroke and heart disease
"Almond butter" - is high in monounsaturated fats which helps to lower LDL "BAD" cholesterol and raises HDL "GOOD" cholesterol. It's also high in omega 3 fatty acids that can help prevent irregular heart rhythms.
"Organic unsweetened applesauce" - is high in soluble fiber which dissolves into a gel-like substance and helps maintain healthy blood sugar and cholesterol levels.
"Manuka honey" - is very high in "enzymes" . . . even higher than regular local honey. And it's known for its gut healthy benefits like for small intestine bacterial overgrowth (SIBO), low stomach acid and acid reflux or GERD, And Manuka honey can balance the body's ratio of "good" to "bad" bacteria . . .
Which in turn . . . can heal and soothe digestion helping to prevent infections and build our immunity.
"Cacao nibs" - contain many antioxidants which help reduce cell damage in the body. This in turn . . . can help to prevent diseases like Alzheimer's, heart disease and cancer. Plus . . . the fiber in them can promote healthy digestion.
"Ceylon cinnamon" - (no substitutes . . . do not use Cassia cinnamon) is also full of antioxidants which help the body handle free radicals and lowers the risk of cancer, heart disease and diabetes. And with this . . . it helps the body manage the "enzymes" that produce hormones and helps to repair bone.
"Pink Himalayan salt - improves respiratory diseases, balances the body's pH, reduces signs of aging, improves sleep quality, regulates blood sugar levels and increases libido.
And finally . . . "vanilla powder" - is another rich antioxidant that can help prevent the breakdown of cells and tissue in the body and with this . . . it has the ability to stimulate the body's natural growth of cells.
And this tasty little treat is only 266 calories per ramekins.
And tomorrow, let's talk about salt.
