Okay . . . so today let's talk about one of the biggest elements to "my" success story.
And that would be . . . "Yacon syrup"!
So what exactly is "yacon"???
Well . . . "Yacon" is nothing other than a "root" that looks like a sweet potato, but it's not.
Because sweet potatoes have starch . . . whereas, yacon root has none.
You can eat them raw, grate them for a salad or steam them as a yummy side dish.
Or . . . you can purchase them in the form of "syrup" like I do.
So what are the many benefits of "yacon syrup" and why is this a staple in my diet???
Well . . . even though "yacon" has a carbohydrate content of about 70 - 80% . . . this content is made up of 3 elements . . . "fructooligosaccharides", "soluble fiber" and "inulin". And these elements have a very low glycemic index and DON'T cause spikes in blood sugar like normal carbohydrates. Therefore . . . this is a "compliant" carbohydrates.
And due to "yacon" being hypoglycemic in itself . . . it has the ability to decrease "insulin resistance" and "serum insulin".
Okay . . . so let's dig a little deeper . . .
"Yacon" is high in antioxidants and potassium. It has anti-cancer and anti-inflammatory properties. It helps to lower cholesterol and blood sugar levels, increases bone density, improves immune system function, increases the body's energy level, aids in managing diabetes, improves digestion, boosts the metabolism, promotes calcium absorption, detoxifies the body, reduces the strain on the cardiovascular system, reduces constipation, bloating and gastric ulcers, prevents fat accumulation in the liver and maintains proper liver health, aids in weight loss, and is an excellent "anti-inflammatory".
So could this syrup get any better???

As I mentioned above . . . "Yacon" syrup contains "fructooligosaccharides" which is a powerful "pre"biotic. And remember from previous Health tips . . . "pre"biotics are what feeds our "good" bacteria in the body for optimal health.
"Yacon" also contains "Inulin" another "pre"biotic that has the ability to help increase the amount of calcium and other minerals the body absorbs from the food we eat.
And "soluble fiber" is a type of fiber that dissolves in water to form a gel-like material that can lower blood cholesterol and glucose levels.
Now . . . "Inulin" gives "yacon" its sweet taste, but the body is unable to digest it. Therefore . . . it provides a feeling of fullness without adding any calories . . . or . . . being transformed into glucose. This is a win - win!
