Why is Sourdough bread so unique?

So, yesterday . . . we spoke about "commercial" bread you buy at the store . . .
And then . . .about bread you make at home with "commercial instant or active yeast" . . .
Well . . . today we're going to continue to better understand the 3rd level of bread.
And that would be . . . made with "WILD YEAST"!!!!
Now, that's some good sourdough "starter" in that picture!!!!
So, what does all that mean???
Well . . . sourdough bread made with "wild yeast" . . . has a "lower" glycemic index then other breads . . .
This means . . . it releases sugar into the bloodstream more slowly . . . which can help regulate blood sugar levels and reduce the risk of "insulin resistance".
Sourdough bread also contains more "fiber" than other breads . . . which is essential for "gut" health, weight management and reducing cholesterol.
And sourdough made with "wild yeast" . . . has a "fermenting process" . . . that creates PROBIOTICS for a healthy gut.
And as an added bonus . . . sourdough has a lower level of "phytate" than other breads . . . which is a compound that can "inhibit" the absorption of "nutrients" . . .
Which makes sourdough made with "wild yeast" . . . HIGHER in "nutritional value"!!!
However . . . just because the label says . . . sourdough . . . DOES NOT MEAN . . . ALL sourdoughs are "created equal".
Many times . . . when you buy this bread. . . it contains additives, preservatives and high levels of sugar.
So, know who is making the sourdough you are purchasing . . . or make it yourself.
