A Yummy "Thanksgiving" Treat


And yes . . . if you're wondering . . . I "do" make "NON-compliant" treats and meals for the holidays sometimes. I don't always live by the rules of "compliant" eating.


And this yummy little treat is great for "Thanksgiving" or in this case . . .


Every month I also supply a "birthday" cake or cupcakes for anyone that has a birthday at my mom's senior housing complex


And this month for November . . . it's "Apple Pie Cupcakes with Vanilla frosting and Cinnamon Sprinkled on top" . . .


So here we go . . .


"NON-Compliant" version


INGREDIENTS: 24 cupcakes


1 - box yellow cake mix (follow the direction for baking the cupcakes)

( I make them healthier with our farm fresh eggs and organic extra virgin olive oil)


1 - large can of organic apple pie filling (healthy version - NO artificial sweeteners)


FROSTING:


1 - 12 oz container of vanilla frosting

A pinch of cinnamon for a topping ( I use Ceylon Cinnamon due to the medicinal factors)


INSTRUCTIONS:


Bake the cupcake according to the directions on the box


In a medium saucepan - put the apple pie filling and warm it until the apples are soft

Then remove the pie filling and place it in a blender

Puree' the pie filling


When cupcakes are cool - take a paring knife and cut a 1 inch wide cone-shaped piece from the top of each cupcake ( discard the pieces of cake)


Fill the cavity of the cupcake with apple filling


Then frost the top of the cupcake and sprinkle with cinnamon


Yummy, yummy in my tummy.
